6 chicken mini fillets
1 teaspoon olive oil
2 teaspoons curry powder
4 tablespoons Greek yogurt
2 tablespoons mango chutney
Zest of ½ lime and 2 teaspoons of lime juice
1 Little Gem lettuce, leaves separated
1 ripe mango, peeled and sliced
½ red onion, finely sliced
2 teaspoons toasted sesame seeds
How to prepare the chicken:
- Heat oven to 200 Celsius fan/gas at 6. Toss chicken fillets in a combination of oil and 1 teaspoon curry powder along with desired amounts of salt and pepper. Place the chicken in a foil-lined baking tray and place inside the pre-heated oven for about 20 minutes.
- Once done, let the chicken cool down a little then slice into strips. Set aside.
- In a bowl, mix the Greek yogurt, chutney, lime zest, lime juice and the remaining curry powder. If the dressing is a little thick, add 1 tablespoon of water.
- To serve, arrange the lettuce leaves on a plate. Top with the mango and cooked chicken. Drizzle with the dressing. Add red onions and sesame seeds as a garnish.
